From the first pressing we extract the wort that we put under controled fermentation, using the rime for its second fermentation and the desk for manual stiring. The disgorging at air of the bottles, without altering its temperature, closes the delicate upbringing process parenhesis.
After 30 in rime breeding months, we achieve a singular personality cava. One can percibe notes of fennel, pear, melon and apple with a persistent and fine bubble that partners in the mouth. It is a cava perfectly balanced, powerful, dry and tempting. Without any added chemicals, sugars nor essences, its moderate intake is suitable for diabetics.
As entree, with greasy dishes or with spanish cold cuts.
Only native varieties from Penedes area had been used: Xarel.lo, Macabeo and Parellada
